Leftover lemons
Today, inspired by a post a friend wrote ages ago on Facebook, I made lemon curd in order to use up a couple of left over lemons. I've never made it before, but it certainly looks like lemon curd and licking the wooden spoon indicates that it tastes like lemon curd. I'm just hoping that it will set more when it cools properly, but I think I can call that a success.

Would you believe I've never even tasted Lemon Curd?

a) it's more of a British thing
b) I don't like lemon pie, and I think it might be similar to lemon pie filling, and
c) the word "curd" is offputting.

(As a child, my favorite pie was coconut. Still is, but as a child, I wasn't always smart enough to understand that the yellow pie was not always coconut. Hence my lifelong loathing for lemon pie.)

I find some lemon meringue pie fillings to be more bitter than I like. I like the sharp taste of lemon, but not the bitterness that some commercial products seem to have.

Having said that, I think I might have made this a bit sweet. Because my scale is difficult to use for weighing things in grams, I used the Mrs Beeton recipe which was in lbs and oz. However, on comparing them this morning, I've realised that the one from the web has much less sugar. Possibly too little? I may need to do some experimenting to adjust things exactly to my taste, but it was easier to make than I expected.

I'm now wondering whether I may have made this a bit too sweet and I possibly need to do some experimenting to adjust things exactly to my taste, but it was easier to make than I expected. I used the microwave so there was no danger of it burning.

I make a lemon and garlic chicken thing fairly often and that always results in a couple of left over lemons. Occasionally I use a few slices in lemon tea, but usually the lemons sit there until they shrivel or go mouldy. I think I can avoid that happening in future. The lemon curd was easier to make than I expected. I used the microwave so there was no danger of it burning.

I've never made lemon curd even though I have a lemon tree in my yard. At the moment my passion fruit are all ripening and I've never attempted passion fruit curd either.

Maybe I should dig out a recipe and have a go seeing that yours turned out fine
