Scottish Breakfast Rolls

1 lb plain flour (the kind for making bread not cakes)
1 teaspoon salt
½ pint of warm water
½ teaspoon of sugar
½ ounce of yeast (I actually use the instant dried yeast and 1½ teaspoons is about right)

Mix salt and flour well together and mix as per any bread dough. I just made a well in the flour, poured in the warm water, sprinkled on the dried powdered yeast and sugar and then mixed in the flour from the edges to make a dough.

Knead until the dough leaves the bowl clean and leave to rise in a warm place until it has doubled in size.

Divide the risen dough into 12 pieces, knead them lightly and shape into rounds. Pat down slightly and put to prove on a lightly greased (or floured) baking sheet for 20 minutes.

Brush with milk or water and dredge with flour (I never bother with this step). Bake in a hot oven 450-425 degrees F, Gas 8-7, 200 degrees C. The recipe says it takes 15-20 minutes, but I test after 10 and they're usually done. But my oven tends to run hot and is a bit fierce.
