This week's theme was: X is for eXertion

This week I exerted myself to try a new recipe. I don't usually try anything fancy, so this was out of my comfort zone.

The first step was soaking the sliced courgettes and some red onion in a brine solution for an hour or so.

I heated the vinegar and spices in a glass bowl in the microwave. (See bowl of murky liquid in the top left of photo.) When I made pickles once before, decades ago, I remember the kitchen filling up with acrid vinegar fumes due to having to boil everything for ages in a big pan. Using the microwave and making only a small quantity worked much better.

The finished pickle, ready to store in the fridge for up to 2 months. It is a fridge pickle and won't keep like a traditional pickle, but if this works, it was actually quite easy and it should be possible to use a variety of veg.

Why the sudden urge to make pickles? This is part of my plan to reverse engineer and recreate the second type of posh burger that our daughter bought me for my birthday meal. It was a meal kit and as I can't buy the chillies in oil or the mild pickle locally, I searched the internet for recipes.
