Chillies in oil

I'm sure those of you who live in A Big Place can just buy these locally, but we don't have a delicatessen in town so I decided to have a go at making my own chilies preserved in oil.

First you had to soak the chillies in a vinegar brine for 24 hours.

Then, after draining thoroughly, just pop them in a sterilised jar and cover in olive oil.

We've had a little taste and I think they'll be fine. Next time I'll make a slightly larger batch, but it's easy to do so I can make small quantities that will get eaten up before they go off.
